Today I prepared a sirloin steak.
In the area connected to the sirloin
This is the hindquarters of a cow.

It's a tender cut, even in thick steaks.
This versatile cut of meat is delicious even when cut for yakiniku (Japanese barbecue).

Basically, it's lean meat with marbling.
It has a rich flavor and is my favorite part of the meat.
